Fabien Laprée

Executive chef

I am Fabien Laprée, executive chef of Armancette Hotel, Chalets & Spa.

Native from the Paris area, I took my first steps in cuisine with my father before undertaking a professional diploma with the chef Serge Latour at the Relais du Castéra.

Very quickly, I moved on to Michelin-starred restaurants where I learned rigour, organisation and discipline. 

In 2016, I flew to Saint-Barthélémy for 1 year to join the team of chef Franck Ferigutti – MOF 2000 – who inspired me to take part in gastronomy competitions. That same year, I won the “Le Romorantin” contest, was runner-up at the Taittinger 2018 competition and was a finalist at the MOF 2019 with the chef Davy Tissot, MOF 2004 and Bocuse d’Or 2021 at the Saison Restaurant.

I want to give my team the rigour, pleasure and sharing.

My cuisine is modern, gourmet and highlights local and artisanal products.

I want to continue the work made by the chefs Julien Darcy and Antoine Westermann and obtain a Michelin star.

I also have the ambition to present me at the MOF 2022 competition.
